7 Ways to Eat Vegetables for Breakfast and Actually Like It
Breakfast hashes are quickly becoming one of the most popular A.M. dishes around, and I am so here for them. They're delicious, versatile, and they can be pretty healthy, too—they're easy to load up with vegetables to get a head start on your recommended two and a half cups a day first thing. Even if you're new to them at breakfast, hashes make a convincing and tasty case for sweet potatoes, corn, and kale with your coffee.
In addition to their veggie potential, breakfast hashes have a lot going for them. Many of them only take one pan to whip up, and they're also easy to make ahead—I like to prep the "base" of the hash for a week of healthy breakfasts and then fry up a quick egg to toss on top when I'm ready to dig in. They're also a great way to use up any leftover veggies or meat in your fridge that you don't want to go to waste. And let's not forget to mention, they're damn delicious.
The more hashes you fall in love with, the more you'll want to play with your own recipes and ingredients, but these seven veggie-packed breakfast hashes are creative, delicious places to start.
